Amen Turkey with Special Honey Glaze

TURKEY PREPARATIONS FOR TURKEY

1. Dry the Turkey:
   - Use paper towels to thoroughly dry the turkey.

2. Prepare the Baking Pan:
   - Place the turkey on a rack inside a baking pan. It’s recommended to use a glass or stainless steel pan rather than a foil pan.

3. Secure the Neck Skin:
   - Fold the skin from the neck over the body of the turkey and secure it with a skewer. This will prevent the dressing from coming out during cooking.

4. Position the Wings:
   - Fold the wings under the bird to prevent them from burning during the roasting process.

5. Prepare the Glaze:
   - Begin preparing your desired glaze for the turkey. (see glaze recipe below)

HONEY GARLIC SAGE GLAZE FOR TURKEY

INGREDIENTS:
1 cup honey
1 cube (1/2 cup) butter
1 tablespoon minced garlic
1 tablespoon minced fresh sage
1 teaspoon apple cider vinegar (optional)
Salt and freshly ground pepper, to taste

EQUIPMENT:
Small saucepan
Fine natural bristle brush (for glazing)
Basting syringe (optional)
Meat thermometer

INSTRUCTIONS:
1. Prepare the Glaze:
- In a small saucepan, combine the honey and butter.
- Heat over medium heat, stirring until the butter melts.
- Add the minced garlic, minced fresh sage, and apple cider vinegar (if using).
- Season with salt and freshly ground pepper to taste.
- Stir the mixture until well-combined and set aside.

2. Glaze the Turkey:
- Preheat your oven and follow the baking instructions for the weight of your turkey.
- Once the turkey has been in the oven for about 45 minutes, begin applying the glaze.
- Using a fine natural bristle brush, glaze the entire turkey, focusing particularly on the breast to prevent it from drying out.
- Repeat glazing every 20 minutes.

3. Optional Basting:
- If you have a basting syringe, fill it with the herbal and garlic mixture and use it to inject the glaze under the skin over the breast for added flavor and moisture.

4. Check Doneness:
- Use a meat thermometer to check the turkey's internal temperature, following the guidelines for your turkey's weight. The turkey is ready when it reaches a safe internal temperature (typically 165°F or 75°C).

5. Serve:
- Once the turkey is cooked to perfection, remove it from the oven and let it rest before carving.
